Joanie -- my accent certainly sound personal as my always write my english so such as here in FINLAND write and story goes Finns language.. .its however nice matter that I can read and associate around world and at the same time learn more english! Hieno Jarmo!

For those unfamiliar with it, Jarmo's kalakukko is to the Kuopio area of Finland what the pasty is to the UP. And like the pasty, it seems it's never as good when made somewhere else.

I made kalakukko many years ago, I used whitefish in the rye bread with possibly onions, no bacon. Turned out pretty good though I'm not much of a fish fan.(maybe it was pike)

That fish-in-the-bread sounds good to me, would love to get a taste some time. Well, Finland is just 500 mls and a ferry ride away, so who knows ...
Anyhow, Jarmo, that Slowfood site was really interesting. Never knew there was such a thing as a "New Hampshire chicken breed"!
